Rainbow Carrots with Honey Ginger Butter Recipe

One of our favourite Vegetarian Recipes using our very own fresh ingredients to make is rainbow carrot with honey ginger butter. Not only s this dish pretty to look at, but carrots are also very good for you too. Orange carrots are high in beta and alpha carotene pigment - helping vitamin A production. Purple carrots have the benefits of anthocyanin. Red carrots contain lycopene whilst yellow carrots are rich in lutein.

The ingredients you'd need are: one cup of rainbow carrots, peeled and sliced on a bias, one teaspoon of freshly grated ginger, one teaspoon of honey, a small pinch of chilli powder, two teaspoons of organic butter - cubed and salt and pepper to taste.

To make this, you'd need to blanch carrots in salted water until fork tender. Remove and place the carrot into a hot sauté pan with a little of the blanching water. 

Add the honey and the organic butter on top and sauté. The butter will nicely emulsify with the water to create a shiny glaze. 

Zest some of the ginger to taste and toss into carrots along with the chilli powder. Season with salt and pepper and serve as a side dish.
