One of our favourite recipes to make with fresh, local and organic produce is our Gazpacho.

All you need to do it to cut two cucumber crosswise into equal pieces 2 inches long. Then, scoop out most seeds to make cup and put the cucumbers in ice water. 

Process about one cup melon of chunks, one cup of fresh tomato chunks, two tablespoons of fresh lemon juice and of course salt and pepper taste. Add some water if desired.

Then, refrigerate for few hours - until the the mixture is nice and cold.

Just before serving taste and add more lemon, salt or pepper if needed. 

Drain the cucumber cups and fll with the gazpacho. Garnish with a sprinkle of basil or mint and a few drops of olive oil and serve.
