Our newest addition to our grain selection is certified organic barley. We have a lot of customers asking us how to cook or enjoy barley. Here is one of our favourite barley recipes - Creamy Barley Salad With Apples. It is prefect for the spring and summer times.

To make this, the ingredients are: Half a cup of organic pearl barley, kosher salt and black pepper, half a cup of plain Greek yogurt, two tablespoons of extra-virgin olive oil, one tablespoon fresh lemon juice, one teaspoon of Dijon mustard, two stalks celery - sliced, one medium apple - thinly sliced, two bunches arugula with the thick stems removed - about 6 cups.

You will need to heat up a medium saucepan and combine the barley, 1.5 cups of water, and half teaspoon salt and bring it to a boil. 

Then, reduce heat to medium-low, cover and simmer until the barley is tender and soft and the water have been absorbed. This generally takes about 25 to 30 minutes. Then, drain and spread on a rimmed baking sheet to cool.

Whisk together the yogurt, oil, lemon juice, mustard, half a teaspoon salt, and quarter teaspoon pepper to make a sauce. Add the celery, apple, and cooled barley and toss gently to combine the mixture.

Divide the arugula among bowls and top it with the barley mixture.
